A.A.的主張

A.A.Anti Additive的縮寫,意指「無添加物」

自人類社會出現開始,飲食文化就隨著歷史發展及生活演進日漸豐富,然而,自食品工業發達以來,令人眼花瞭亂的人工添加物日新月異,只求省略傳統繁複冗長的餐飲製程,盡可能縮短料理時間。這些不勝枚舉的人工添加物,不但使食物失去原本應有的天然純粹風味,傳統上理應一生懸命的料理職人精神也日漸式微,更對人類的身體產生或多或少的危害。
 
此外,即使各國政府已對食品添加物設立了相關法令規範,規定其使用範圍及用量,然而,一般消費者對於餐廳店家在餐飲製程中會使用添加物的情形卻難以得知。
 
一方面為了捍衛源遠流長的飲食文化,一方面盼能保存消失中的傳統餐飲製程,同時為消費者打造健康永續又不失美味的餐飲環境,A.A.提倡並推廣"Anti Additive, healthy and sustainable",即「無添加物,健康永續」,並於世界各地陸續成立非營利組織,計劃推動全球餐飲業者依照各國菜系傳統製作方式,秉持誠信信念,控管工序及食材來源,漸進回復原有飲食文化,排除對人體有直接或間接傷害之人工添加物。在通路銷售的食品方面,推動食品製造於原物料的單純基礎上,依照合理的加工方式生產,避免過度延長保存期限,或改變產品顏色、口感,於食品中添加各式添加物。以近年來先進國家風行的「Clean Label」精神為推廣基礎,除提倡於食品減少添加物外,同時提供明顯、易判讀的標示,使消費者得以輕易判斷內含添加物的多寡。我們期許透過A.A.的推廣,還原飲食應有的樣貌,並且使世界各國的消費者皆能擁有安全與美味兼具的餐飲或食品消費環境。
 
註:國際間一般認為的人工添加物舉例如下:人工香精、味精(麩酸鈉)、嫩精(木瓜酵素)、雞粉、高湯粉、牛肉精粉、人工色素、防腐劑、保色劑、 膨脹劑、甜味劑、調味劑、香料、粘稠劑、漂白劑、抗氧化劑、殺菌劑、乳化劑、起雲劑、軟化劑、穩定劑、消泡劑等。

 

A.A.構想發展

2013年間眾多國際餐飲工作者開始提倡與「Clean Label」觀念契合的A.A.精神除該運動原本針對的食品範疇外亦將A.A.精神推廣至餐飲業並於荷蘭草創A.A.臨時總部其後陸續於澳洲正式成立「亞太無添加餐飲食品發展促進會Asia Pacific Anti Additive Association在香港正式成立「亞洲無添加餐飲食品發展協會Asia Anti Additive Association of Hong Kong並立案成立正式法人組織近年更於台灣成立「無添加餐飲食品發展協會Taiwan Anti Additive Association亦為正式社團法人近來A.A.無添加理念也成功推廣至義大利並預計於當地正式成立A.A.組織做為於歐洲各國推廣A.A.理念的重要基地

● 世界知名餐飲評鑑如Le Guide Michelin、Asia’s 50 Best Restaurants、World’s 50 Best Restaurants等,皆以無添加工序為重要評選指標
● 消費市場逐漸轉變,無添加餐廳營運績效及無添加食品銷售的成長,皆有目共睹
● 無添加精神成為餐飲業未來潮流,同時也是媒體報導的重要話題

A.A.的目標任務

1. 由各領域專家及學者組成評鑑組織,以專業且嚴謹的評核機制,建立具有公信力的無添加餐飲食品的專業認證,供世界各國消費者依循參考。
2. 輔導業者逐步通過各階段認證,漸進排除餐飲製程與食品生產中的人工添加物。
3. 推廣餐飲及食品業者加入A.A.輔導及認證機制,大量提升無添加餐廳及食品曝光度。
4. 藉由對餐飲及食品業者舉辦各類型相關講座及教育訓練,推廣無添加製程概念。
5. 建立無添加物的資源交流共享平台,宣揚無添加的核心價值。

 

About A.A.

WHO WE ARE

Founded in 2013 in the Netherlands, the Anti Additive Association is a non- profit organization dedicated to building a no additive food supply, improving the health of people and the environment by educating and providing resources for consumers and restaurant owners interested in driving change to a more sustainable food system. We believe that everyone deserves an informed choice about whether or not to consume food additives. Working with a collaborative network of technical and communications advisers from all backgrounds and sectors worldwide, we serve as the eyes and ears of consumer to help them make good food choices.

 

HKAA, APAA and TWNAA

The Anti Additive Association is a global network with presence and activities in almost every region. The network is made up of the international organizations around the world which are allowed to use the Anti Additive Association emblem. It also represents all the activities they undertake to better the food supply throughout the world. With its temporary headquarter in Europe and a branch in Italy, these organizations are The Asia Pacific Anti Additive Association, the Asia Anti Additive Association of Hong Kong, the Taiwan Anti Additive Association. Each has its own individual status and exercises no authority over the others.

 

Our Mission

To raise public awareness and influence a healthy-eating lifestyle;

Asian countries, in particular, generally lack an awareness of the hazardous consequences of consuming artificial food additives. According to our hundreds of street interviews and field survey, it reveals that public will change their attitude and impression only based on the media press and does have no sense what exactly they've eaten, no matter those food additives are good for health or involve any possibility to harm our body. The Anti-Additive Association believes that everyone deserves to have an informed choice about whether or not to consume food additives, and therefore, aim to help educate consumers on making healthier and safer food choices for themselves. This is one of the important reasons we need someone professional like you to be our solid education back up. 

To build a monitoring mechanism to ensure food served are free of food additives;

To set guidance and provide technical support on all matters of food additives; 

To inspire the hearts of like-minded people in the industry and work together to shape the future of a safer food system.
